MUSCOVY DUCK
If you've never eaten Muscovy, you should know that it is truly spectacular. A unique breed, Muscovy is not at all greasy like other duck, it's more like extra-special veal, with a fine texture, very little fat, and a delicious flavor. It's the finest duck there is, and perhaps one of the finest of all meats.

Old heritage breeds of chicken were used in the early
1960’s to develop a new chicken that met the highest standards of the French Label Rouge
Free Range program. These birds are now used as an alternative to the Cornish Cross broilers commonly used by factory farms. They are slower
growing and better suited to a pastured production model. Their natural
instincts and behavior are preserved, allowing them to forage, free range, outside in sunlight and fresh air. This makes for a chicken that is healthy, succulent and textured.
